Ingredients
-
1 pound lean ground beef
-
1 cup chunky salsa
-
1 (10 oz) can red enchilada sauce
-
8 (8-inch) tortillas
-
1 (8 oz) package shredded Four Cheese Mexican blend (about 2 cups)
Instructions
-
Preheat Oven
Preheat the oven to 350°F (175°C) and lightly spray a 9×13-inch baking dish with nonstick spray. -
Cook Beef
In a large skillet over medium-high heat, brown the ground beef. Drain excess fat, reduce heat to medium-low, and stir in the salsa. Cook until heated through, then remove from heat. -
Prepare Baking Dish
Pour about half of the enchilada sauce into the bottom of the prepared dish and spread evenly. -
Assemble Enchiladas
Warm tortillas per package directions. Add about ¼ cup of the meat mixture to each tortilla and top with 1 heaping tablespoon of cheese. Roll tightly and place seam side down in the dish. -
Top and Bake
Pour remaining enchilada sauce over the enchiladas and sprinkle with remaining cheese. Cover tightly with aluminum foil. -
Bake
Bake for 30–35 minutes, until bubbly and heated through. Serve hot.
Notes
Make it Spicy: Use spicy salsa or add diced jalapeños to the meat mixture.
Cheese Options: Swap Four Cheese blend with cheddar, pepper jack, or Monterey Jack.
Tortilla Tip: Corn tortillas work too—just warm them well to avoid cracking.
Storage: Refrigerate leftovers in an airtight container for up to 3 days.
Freezer-Friendly: Assemble and freeze before baking. Thaw overnight and bake as directed.
