Ingredients

2 pounds beef chuck, cut into 1-inch cubes

4 medium potatoes, peeled and diced

3 carrots, sliced

1 can (14.5 oz) diced tomatoes with juice

1 packet onion soup mix
Instructions

Prepare the vegetables: Peel and dice the potatoes into bite-sized pieces. Slice the carrots into rounds.

Layer the ingredients: Place the diced potatoes and sliced carrots in the bottom of your slow cooker.

Add the beef: Layer the cubed beef evenly over the vegetables.

Combine the sauce: Pour the can of diced tomatoes with juice over the beef.

Sprinkle onion soup mix: Sprinkle the entire packet of onion soup mix evenly over the top.

Cook: Cover and cook on low for 7–8 hours or on high for 4–5 hours, until the beef is tender and flavors meld beautifully.

Serve: Stir gently and serve hot, ideally with fresh bread or over rice.
Notes
For thicker stew, remove lid in the last 30 minutes to allow some liquid to evaporate.
You can add chopped celery or onions if desired for extra flavor.
Leftovers reheat well and often taste better the next day.
