Ingredients

1 lb boneless, skinless chicken breasts, cut into bite-sized pieces

1 zucchini, thinly sliced and quartered

1 yellow squash, thinly sliced and quartered

1 cup white button mushrooms, quartered

1 tbsp olive oil (or light-colored mild oil)

3 tbsp soy sauce (adjust to taste)

1 tbsp rice wine vinegar

1 tsp sesame oil

2 cloves garlic, minced

½ tsp garlic powder

Salt and black pepper, to taste
Instructions

Preheat Air Fryer to 380°F (193°C).

Marinate the Chicken: In a bowl, mix soy sauce, rice vinegar, sesame oil, garlic, garlic powder, salt, and pepper. Add chicken and toss to coat. Let marinate for at least 10 minutes.

Toss the Vegetables: In a separate bowl, toss the zucchini, squash, and mushrooms with olive oil and a pinch of salt and pepper.

Cook in Air Fryer: Add marinated chicken and veggies to the air fryer basket. Cook for 14–16 minutes, shaking the basket halfway through, until chicken is cooked through and vegetables are tender.
