For the Cake:

  • 1 ½ cups all-purpose flour

  • 1 tsp baking powder

  • ½ tsp baking soda

  • ¼ tsp salt

  • ½ cup unsalted butter, softened

  • ¾ cup granulated sugar

  • 2 large eggs

  • 1 tsp vanilla extract

  • 1 tsp almond extract

  • ¾ cup buttermilk

For the Almond Cream Filling/Frosting:

  • 1 cup heavy whipping cream

  • ¼ cup powdered sugar

  • ½ tsp almond extract

  • ⅓ cup sliced almonds, toasted (for topping)


Instructions

  • Preheat Oven: Preheat to 350°F (175°C). Grease and flour an 8-inch round cake pan.

  • Make Batter: In a bowl, whisk together flour, baking powder, baking soda, and salt. In another bowl, cream butter and sugar until light and fluffy. Beat in eggs one at a time, then add vanilla and almond extracts. Alternate adding flour mixture and buttermilk, mixing just until combined.

  • Bake: Pour batter into prepared pan and bake for 25–30 minutes, or until a toothpick comes out clean. Cool completely on a wire rack.

  • Make Almond Cream: Whip heavy cream with powdered sugar and almond extract until stiff peaks form.

  • Assemble: Slice cake horizontally into two layers. Spread half the almond cream on the bottom half. Add top layer and spread remaining cream on top. Sprinkle with toasted almonds.

 

  • Chill and Serve: Refrigerate for at least 30 minutes before slicing. Serve chilled.

Notes

For extra almond flavor, brush cake layers with amaretto or almond syrup.

Use stabilized whipped cream or mascarpone for a firmer filling if needed.

Store in refrigerator for up to 3 days.
