  • 3 cups cooked chicken, diced or shredded
  • 3 cups cooked rice
  • ½ cup butter, room temperature and cubed
  • 8 ounces cream cheese, room temperature and cubed
  • 10.5 ounces cream of chicken soup
  • 3 cloves garlic, minced
  • 1 (0.7 ounce) packet Italian dressing mix (e.g., Good Seasons)
  • 1 cup chicken stock
  • 2 cups shredded Colby Jack cheese, divided use
  • Salt and pepper to taste

 

  • Fresh parsley for garnish

Instructions

  1. Prepare the Sauce:

    • In a large mixing bowl, combine the butter, cream cheese, and cream of chicken soup. Mix until smooth and well combined.
    • Add the minced garlic, Italian dressing mix, and chicken stock to the bowl. Stir everything together until fully incorporated.
  2. Add the Chicken and Rice:

    • Stir in the diced or shredded cooked chicken and cooked rice. Mix well to coat all the ingredients in the creamy sauce. Season with salt and pepper to taste.
  3. Assemble the Dish:

    • Preheat your oven to 350°F (175°C).
    • Transfer the chicken and rice mixture to a greased 9×13-inch baking dish and spread it evenly.
    • Top with 1 ½ cups of the shredded Colby Jack cheese.
  4. Bake the Casserole:

    • Cover the dish with aluminum foil and bake for 25-30 minutes, or until the casserole is hot and bubbly.
    • After 25-30 minutes, remove the foil and sprinkle the remaining ½ cup of shredded Colby Jack cheese over the top. Return to the oven for another 5-7 minutes, or until the cheese is melted and golden.
  5. Garnish and Serve:

    • Once the casserole is done, remove from the oven and let it cool for a few minutes.
    • Garnish with fresh parsley before serving.

Notes

  • You can use any cooked chicken you prefer, such as rotisserie chicken or leftovers.
  • For extra flavor, you can add some vegetables like broccoli or peas to the mixture.
