- 3 ripe Avocados, diced
- 1 cup Cherry Tomatoes, halved
- 1 small Red Onion, thinly sliced
- 1 cup Cucumber, diced
- 1/2 cup Corn Kernels (fresh, frozen, or canned)
- 1/4 cup Fresh Cilantro, chopped
- 1/4 cup Feta Cheese (optional, for extra creaminess)
- 1/4 cup Pumpkin or Sunflower Seeds (optional, for crunch)
Dressing:
- 2 tbsp Olive Oil
- 2 tbsp Fresh Lime Juice
- 1 tsp Honey or Agave (optional, for sweetness)
- 1/2 tsp Ground Cumin
- Salt and Pepper, to taste
Instructions
- In a large bowl, combine the diced avocados, cherry tomatoes, red onion, cucumber, corn, and cilantro. Gently toss to combine.
- In a small bowl, whisk together the olive oil, lime juice, honey, cumin, salt, and pepper until well combined.
- Drizzle the dressing over the salad and toss gently to coat all the ingredients.
- If using, sprinkle the feta cheese and seeds on top for added flavor and texture.
- Serve immediately, or chill for 15 minutes before serving for a refreshing, cool salad.
Notes
- You can add a diced jalapeño for extra heat or chili flakes to spice things up.
- Leave out the feta for a dairy-free version.
- To turn it into a more filling meal, add grilled chicken, shrimp, or chickpeas.
