Ingredients

  • 3 ripe Avocados, diced
  • 1 cup Cherry Tomatoes, halved
  • 1 small Red Onion, thinly sliced
  • 1 cup Cucumber, diced
  • 1/2 cup Corn Kernels (fresh, frozen, or canned)
  • 1/4 cup Fresh Cilantro, chopped
  • 1/4 cup Feta Cheese (optional, for extra creaminess)
  • 1/4 cup Pumpkin or Sunflower Seeds (optional, for crunch)

Dressing:

  • 2 tbsp Olive Oil
  • 2 tbsp Fresh Lime Juice
  • 1 tsp Honey or Agave (optional, for sweetness)
  • 1/2 tsp Ground Cumin
  • Salt and Pepper, to taste

Instructions

  • In a large bowl, combine the diced avocados, cherry tomatoes, red onion, cucumber, corn, and cilantro. Gently toss to combine.
  • In a small bowl, whisk together the olive oil, lime juice, honey, cumin, salt, and pepper until well combined.
  • Drizzle the dressing over the salad and toss gently to coat all the ingredients.
  • If using, sprinkle the feta cheese and seeds on top for added flavor and texture.
  • Serve immediately, or chill for 15 minutes before serving for a refreshing, cool salad.

Notes

  • You can add a diced jalapeño for extra heat or chili flakes to spice things up.
  • Leave out the feta for a dairy-free version.
