Ingredients

  • 2 cups cooked sushi rice
  • 1 avocado, sliced
  • 1/2 cucumber, julienned
  • 1/2 red bell pepper, julienned
  • 1/4 cup sesame seeds
  • 2 tablespoons rice vinegar
  • 1 tablespoon sugar
  • 1 teaspoon salt
  • Soy sauce, for serving
  • Pickled ginger, for serving
  • Wasabi, for serving

Instructions

  • In a small bowl, mix together rice vinegar, sugar, and salt until the sugar dissolves. Pour this mixture over the cooked sushi rice and stir well to combine.
  • Line a round mold with plastic wrap. Place a layer of seasoned sushi rice at the bottom of the mold, pressing it down gently.
  • Top the rice with a layer of avocado slices, followed by julienned cucumber and red bell pepper.
  • Repeat the layers, pressing gently after each addition, until the mold is full.
  • Carefully invert the mold onto a plate and remove the plastic wrap.
  • Sprinkle sesame seeds generously on top of the sushi cake.
  • Serve the sushi cake with soy sauce, pickled ginger, and wasabi on the side for dipping.

Notes

  • If you don’t have a sushi mold, you can use a small bowl or any round container that will help you form the layers.
  • For extra flavor, you can drizzle a little bit of soy sauce over the layers before adding the avocado and vegetables.
  • You can add more vegetables like shredded carrots or a few slices of smoked salmon for variety.
