- 2 cups cooked sushi rice
- 1 avocado, sliced
- 1/2 cucumber, julienned
- 1/2 red bell pepper, julienned
- 1/4 cup sesame seeds
- 2 tablespoons rice vinegar
- 1 tablespoon sugar
- 1 teaspoon salt
- Soy sauce, for serving
- Pickled ginger, for serving
- Wasabi, for serving
Instructions
- In a small bowl, mix together rice vinegar, sugar, and salt until the sugar dissolves. Pour this mixture over the cooked sushi rice and stir well to combine.
- Line a round mold with plastic wrap. Place a layer of seasoned sushi rice at the bottom of the mold, pressing it down gently.
- Top the rice with a layer of avocado slices, followed by julienned cucumber and red bell pepper.
- Repeat the layers, pressing gently after each addition, until the mold is full.
- Carefully invert the mold onto a plate and remove the plastic wrap.
- Sprinkle sesame seeds generously on top of the sushi cake.
- Serve the sushi cake with soy sauce, pickled ginger, and wasabi on the side for dipping.
Notes
- If you don’t have a sushi mold, you can use a small bowl or any round container that will help you form the layers.
- For extra flavor, you can drizzle a little bit of soy sauce over the layers before adding the avocado and vegetables.
- You can add more vegetables like shredded carrots or a few slices of smoked salmon for variety.
