Basic Cauliflower Fritters

Description

These crispy, golden-brown fritters are a delightful way to enjoy cauliflower. Seasoned with fresh herbs and Parmesan cheese, they make a perfect snack, appetizer, or side dish. Serve them with a tangy dipping sauce or a dollop of yogurt for an extra burst of flavor.


Ingredients

  • 1 small cauliflower (about 350g), chopped into small florets

  • ½ teaspoon salt

  • ½ teaspoon black pepper

  • Zest of 1 lemon

  • Small bunch of fresh parsley, chopped

  • Small bunch of chives, chopped

  • 60g (½ cup) plain (all-purpose) flour

  • 1 clove garlic, peeled and minced

  • 50g (½ cup) grated Parmesan cheese

  • 1 medium egg

  • 3 tablespoons olive oil (for frying)

  • Tzatziki, for serving

  • A few sprigs of fresh dill, for garnish


Instructions

  • Steam or Boil the Cauliflower:

    • Steam or boil the cauliflower florets for about 6 minutes, until tender.

    • Drain well and allow to cool slightly

    • Place the cooked cauliflower in a large bowl and crush lightly with a potato masher until it resembles small gravel-sized lumps.

    • Add salt, pepper, lemon zest, chopped parsley, chopped chives, flour, minced garlic, grated Parmesan, and the egg.

    • Mix together until well combined.

    • Scoop out a heaped tablespoon of the mixture and roll into a ball in your hands.

    • Flatten the ball into a patty and place on a plate.

    • Repeat with the remaining mixture to form 8–10 fritters

  • Fry the Fritters:

    • Heat the olive oil in a large frying pan over medium heat.

    • Working in batches, fry the fritters for 3–4 minutes on each side, until golden brown.

    • Remove from the pan and drain on paper towels.

 

  • Serve:

    • Place the fritters on a serving plate.

    • Top with a dollop of tzatziki and garnish with fresh dill.

    • Serve warm.

Notes

For a vegan version, omit the egg and use a flaxseed meal mixture as a binder.

These fritters can be made ahead and stored in the refrigerator for up to 2 days.

To reheat, place them in a preheated oven at 180°C (350°F) for about 10 minutes, or until heated through.
