  • 12 oz rotini pasta
  • 3 cloves garlic, minced
  • 2 tbsp butter
  • 1 cup heavy cream
  • 1 cup freshly grated parmesan cheese
  • Salt and pepper, to taste
  • 1 tbsp fresh parsley, chopped (for garnish)

Instructions

  • Cook the Pasta: Bring a large pot of salted water to a boil. Cook the rotini pasta according to the package directions until al dente. Drain and set aside, reserving about 1/2 cup of pasta water.
  • Cook the Beef: While the pasta is cooking, heat a large skillet over medium heat. Add the ground beef (or steak strips) and cook until browned, breaking it apart as it cooks. Season with salt and pepper. Once cooked through, drain any excess fat and set aside.
  • Prepare the Sauce: In the same skillet, melt the butter over medium heat. Add the minced garlic and sauté for 1-2 minutes until fragrant, being careful not to burn it.
  • Make the Sauce: Stir in the heavy cream and bring it to a gentle simmer. Let it cook for 2-3 minutes until it thickens slightly. Stir in the parmesan cheese and cook until the sauce is creamy and smooth. Season with more salt and pepper to taste.
  • Combine: Add the cooked pasta and beef to the skillet with the sauce. Toss to combine, adding a bit of reserved pasta water if the sauce needs to be thinned.
  • Serve: Garnish with fresh parsley and serve immediately.

  • You can swap the ground beef for chicken, turkey, or a vegetarian protein if preferred.
