For the Pasta:

  • 10 oz (280g) fettuccine or linguine
  • 1 tsp salt (for boiling water)

For the Alfredo Sauce:

  • 1 stick (8 tbsp or 113g) unsalted butter
  • 2 cups (480ml) heavy cream
  • 2 cloves garlic, minced
  • 1 tsp Italian seasoning
  • ½ tsp salt
  • ¼ tsp black pepper
  • 1 ¼ cups (125g) freshly grated Parmesan cheese
  • 2 tbsp chopped fresh parsley (optional, for garnish)

Instructions

  • Cook the Chicken:

    • Season both sides of the chicken breasts with Italian seasoning, garlic powder, salt, and pepper.
    • Heat the olive oil in a large skillet over medium heat.
    • Cook the chicken for 6-7 minutes per side, or until the internal temperature reaches 165°F (75°C) and the chicken is golden brown.
    • Remove the chicken from the skillet and set it aside to rest for a few minutes. Once rested, slice it into thin strips.
  • Boil the Pasta:

    • In a large pot, bring salted water to a boil.
    • Cook the fettuccine or linguine according to package instructions (usually about 9-10 minutes).
    • Drain the pasta, reserving about 1 cup of pasta water. Set aside.
  • Make the Alfredo Sauce:

    • In the same skillet used for the chicken, melt the butter over medium heat.
    • Add the minced garlic and cook for 1-2 minutes, until fragrant, being careful not to burn the garlic.
    • Pour in the heavy cream and bring to a simmer.
    • Stir in the Italian seasoning, salt, and pepper. Let the sauce simmer for 4-5 minutes, until it thickens slightly.
    • Reduce the heat to low and gradually add the freshly grated Parmesan cheese, stirring continuously until the cheese is fully melted and the sauce is smooth.
  • Combine Everything:

    • Add the cooked pasta to the Alfredo sauce, tossing to coat the pasta evenly. If the sauce is too thick, add a little reserved pasta water to reach your desired consistency.
    • Add the sliced chicken on top of the pasta and toss gently to combine.
  • Serve:

    • Divide the Chicken Alfredo between plates.
    • Garnish with freshly chopped parsley (optional) and additional grated Parmesan cheese if desired.
    • Serve immediately and enjoy!
