  • 9 large eggs

  • 2 tablespoons whole milk

  • ⅓ cup grated Parmesan cheese

  • ¼ teaspoon fine sea salt

  • ⅛ teaspoon freshly ground black pepper

  • 2 tablespoons extra virgin olive oil

  • 1 medium onion, finely chopped

  • 1 large garlic clove, minced

  • 8 ounces fresh spinach, coarsely chopped

  • 2 ounces goat cheese, crumbled

  • 2 tablespoons sun-dried tomatoes, chopped (optional)


Instructions

  • Prepare the Egg Mixture:
    Whisk together eggs, milk, Parmesan cheese, salt, and pepper in a large bowl until combined. Set aside.

  • Cook Onion and Garlic:
    Heat olive oil in an oven-safe non-stick skillet over medium heat. Sauté onion for 4–5 minutes until translucent. Add garlic (and sun-dried tomatoes if using) and cook 1 more minute.

  • Wilt the Spinach:
    Add spinach in batches, tossing with onion mixture until wilted.

  • Combine with Egg Mixture:
    Spread spinach evenly in skillet. Pour egg mixture over vegetables. Gently lift edges of spinach mixture so egg seeps beneath.

  • Add Goat Cheese and Cook:
    Scatter goat cheese evenly on top. Reduce heat to low, cover skillet, and cook 10–13 minutes until edges are set but center is slightly jiggly.

 

  • Broil to Finish:
    Preheat broiler, place oven rack in upper third. Broil frittata 3–4 minutes until top is lightly golden. Cool for several minutes before serving.

Notes

Skillet handle becomes very hot after broiling—use mitts or cool with ice before handling.

Sun-dried tomatoes are optional but add a tangy depth.

For a fluffier texture, separate eggs and beat whites until stiff, then fold in yolks (optional).
