For the Blackened Chicken:
- 2 boneless, skinless chicken breasts
- 2 tbsp olive oil
- 1 tbsp paprika

- ½ tsp cayenne pepper (adjust to taste)
- ½ tsp salt
- ½ tsp black pepper
For the Alfredo Sauce:
- 2 tbsp unsalted butter
- 2 cloves garlic, minced
- 1 ½ cups heavy cream
- 1 cup grated Parmesan cheese
- 1 tsp garlic powder
- ¼ tsp salt (or to taste)
- ¼ tsp black pepper (or to taste)
- 1 tbsp chopped fresh parsley (for garnish)
- 12 oz fettuccine pasta
Instructions
- Cook the fettuccine:
- Cook the fettuccine according to package instructions. Drain and set aside, reserving ½ cup of pasta water.
- Prepare the chicken:
- In a small bowl, combine paprika, garlic powder, onion powder, thyme, oregano, cayenne pepper, salt, and black pepper.
- Rub the seasoning mixture generously over both sides of the chicken breasts.
- Heat olive oil in a large skillet over medium-high heat. Once the skillet is hot, add the chicken breasts and cook for 5-7 minutes on each side, or until the chicken is fully cooked and has a blackened, crispy crust.
- Remove the chicken from the skillet and let it rest for a few minutes before slicing it into thin strips.
- Make the Alfredo sauce:
- In the same skillet, reduce the heat to medium. Add the butter and let it melt.
- Add the minced garlic and cook for 1-2 minutes until fragrant.
- Pour in the heavy cream and bring to a simmer, stirring occasionally.
- Add the grated Parmesan cheese, garlic powder, salt, and black pepper. Continue stirring until the sauce thickens and becomes creamy.
- If the sauce is too thick, you can add a bit of the reserved pasta water to reach the desired consistency.
- Combine the pasta and sauce:
- Add the cooked fettuccine pasta to the skillet with the Alfredo sauce. Toss to coat the pasta in the creamy sauce.
- Add the sliced blackened chicken on top and toss again to combine.
- Serve:
- Serve the Blackened Chicken Alfredo hot, garnished with fresh chopped parsley for a pop of color and freshness.
