For the Blackened Chicken:

  • 2 boneless, skinless chicken breasts
  • 2 tbsp olive oil
  • 1 tbsp paprika
  • 1 tsp garlic powder
  • 1 tsp onion powder
  • 1 tsp dried thyme
  • 1 tsp dried oregano
  • ½ tsp cayenne pepper (adjust to taste)
  • ½ tsp salt
  • ½ tsp black pepper

For the Alfredo Sauce:

  • 2 tbsp unsalted butter
  • 2 cloves garlic, minced
  • 1 ½ cups heavy cream
  • 1 cup grated Parmesan cheese
  • 1 tsp garlic powder
  • ¼ tsp salt (or to taste)
  • ¼ tsp black pepper (or to taste)
  • 1 tbsp chopped fresh parsley (for garnish)
  • 12 oz fettuccine pasta

Instructions

  • Cook the fettuccine:
    • Cook the fettuccine according to package instructions. Drain and set aside, reserving ½ cup of pasta water.
  • Prepare the chicken:
    • In a small bowl, combine paprika, garlic powder, onion powder, thyme, oregano, cayenne pepper, salt, and black pepper.
    • Rub the seasoning mixture generously over both sides of the chicken breasts.
    • Heat olive oil in a large skillet over medium-high heat. Once the skillet is hot, add the chicken breasts and cook for 5-7 minutes on each side, or until the chicken is fully cooked and has a blackened, crispy crust.
    • Remove the chicken from the skillet and let it rest for a few minutes before slicing it into thin strips.
  • Make the Alfredo sauce:
    • In the same skillet, reduce the heat to medium. Add the butter and let it melt.
    • Add the minced garlic and cook for 1-2 minutes until fragrant.
    • Pour in the heavy cream and bring to a simmer, stirring occasionally.
    • Add the grated Parmesan cheese, garlic powder, salt, and black pepper. Continue stirring until the sauce thickens and becomes creamy.
    • If the sauce is too thick, you can add a bit of the reserved pasta water to reach the desired consistency.
  • Combine the pasta and sauce:
    • Add the cooked fettuccine pasta to the skillet with the Alfredo sauce. Toss to coat the pasta in the creamy sauce.
    • Add the sliced blackened chicken on top and toss again to combine.
  • Serve:
    • Serve the Blackened Chicken Alfredo hot, garnished with fresh chopped parsley for a pop of color and freshness.
