Made entirely on the Blackstone griddle, they’re easy to make, endlessly customizable, and perfect for everything from backyard BBQs to game day gatherings.
Ingredients

1.5 lbs baby potatoes or small Yukon Gold potatoes

2 tbsp olive oil or melted butter

½ tsp black pepper

½ tsp garlic powder

1 cup shredded cheese (cheddar or preferred blend)

½ cup cooked bacon, crumbled

½ cup sour cream

¼ cup green onions or chives, chopped

Instructions

Boil Potatoes: In salted water, boil baby potatoes until fork-tender (about 15–20 minutes). Drain and let cool slightly.

Preheat Griddle: Heat the Blackstone griddle over medium heat. Add a layer of oil or butter.

Smash Potatoes: Place potatoes on the hot griddle. Gently press each one flat using a spatula or masher.

Season: Sprinkle with salt, pepper, and garlic powder.

Crisp Up: Cook for 4–5 minutes on each side until golden and crispy.
