Description

These Blackstone Loaded Smashed Potatoes are the perfect side dish for any BBQ or outdoor cooking session. Crispy, golden smashed baby potatoes are loaded with creamy melted cheddar cheese, savory bacon bits, and a sprinkle of fresh herbs for an irresistible finish. Cooked on the Blackstone griddle, these potatoes have a smoky, flavorful crunch that will elevate any meal. Customize with sour cream for an extra creamy touch!

  • 2 pounds baby potatoes

  • 2 Tablespoons butter

  • 3 Tablespoons olive oil

  • 1 teaspoon garlic powder

  • 1 teaspoon sea salt

  • 1 cup shredded cheddar cheese

  • ½ cup bacon bits

Optional Toppings

  • Sour cream

  • Chopped fresh parsley or chives for garnish


Instructions

  • Prep the Potatoes:

    • Wash the baby potatoes thoroughly. Place them in a large pot of salted water and boil until fork-tender, about 15-20 minutes.

  • Smash the Potatoes:

    • Once cooked, drain the potatoes and let them cool slightly. Use a fork or the bottom of a glass to gently smash each potato to about half its size.

  • Griddle Cooking:

    • Preheat your Blackstone griddle over medium heat. Add the butter and olive oil to the griddle. Once melted, arrange the smashed potatoes in a single layer on the griddle. Cook for 3-4 minutes per side until crispy and golden brown.

  • Add Toppings:

    • Sprinkle the smashed potatoes with garlic powder, sea salt, and shredded cheddar cheese. Allow the cheese to melt for a few minutes.

 

  • Finish & Serve:

    • Top with bacon bits, and optionally garnish with fresh parsley or chives. Serve with sour cream on the side for extra creaminess.

Notes

You can substitute the bacon bits with turkey bacon or omit them for a vegetarian version.

For extra flavor, try adding a sprinkle of smoked paprika or chili flakes.
