Description

The Blueberry Breakfast Quesadilla is a quick, flavorful morning recipe combining sweet blueberries, melty cheese, and warm tortillas for a sweet-savory breakfast that’s easy to prepare, customizable, and packed with nutrients to fuel your day.

Ingredients

Scale

Main Ingredients

  • 2 large flour tortillas (soft and sturdy)
  • 1 cup fresh blueberries (washed and dried)
  • 1 cup shredded cheese (mozzarella, Monterey Jack, or mild cheddar)
  • 1 tablespoon honey or maple syrup
  • 1/4 teaspoon ground cinnamon
  • 1 tablespoon butter or coconut oil (for cooking)

Instructions

  1. Prepare Your Ingredients: Wash and dry the blueberries thoroughly. Grate the cheese if it is not pre-shredded. Have the cinnamon and sweetener ready for quick assembly.
  2. Assemble the Quesadilla: Lay one flour tortilla flat on a clean surface. Sprinkle an even layer of shredded cheese over the tortilla. Scatter the fresh blueberries on top. Drizzle honey or maple syrup evenly, and sprinkle a pinch of cinnamon over the filling.
  3. Cook on the Stovetop: Heat a non-stick pan over medium heat. Add a pat of butter or a teaspoon of coconut oil to the pan. Carefully place the assembled tortilla in the pan. Optionally, top with a second tortilla to make a double-layer quesadilla or fold the tortilla in half.
  4. Brow and Melt: Cook for about 3 minutes on one side until the tortilla is golden brown and crispy. Carefully flip and cook for another 2 to 3 minutes until the cheese is melted and the other side is toasted perfectly.
  5. Slice and Serve: Remove the quesadilla from the pan and cut into wedges. Serve warm for the best flavor and texture.

Notes

  • Use fresh blueberries to avoid excess moisture and sogginess.
  • Cook on medium-low heat to let the cheese melt properly before the tortilla crisps.
  • Press gently with a spatula or lid while cooking to meld ingredients together.
  • Experiment with cheese blends like mozzarella mixed with sharp cheddar for added flavor depth.
  • Do not overload the quesadilla to prevent fillings from spilling.
