  • 12 teaspoons pure vanilla extract (adjust to your taste preference)
  • ¼ cup shredded coconut

Instructions

  • Preheat the Oven: Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper.
  • Mash the Bananas: In a large bowl, mash the ripe bananas until smooth.
  • Combine Dry Ingredients: Add the quick oats to the mashed bananas and mix well to combine.
  • Add Optional Ingredients: Stir in your desired add-ins, such as nut butter, chocolate chips, honey, cacao nibs, Nutella, peanut butter chips, crushed nuts, dried fruit, vanilla extract, and shredded coconut. Mix everything until well combined.
  • Shape the Cookies: Scoop out tablespoon-sized portions of dough and place them on the prepared baking sheet, flattening each one slightly with the back of a spoon.
  • Bake: Bake the cookies for 10-12 minutes, or until they are golden around the edges.
