- 2 large bananas (mashed)
- 1 ¾ cups quick oats

- 1–2 teaspoons honey (adjust to your taste preference)
- ¼ cup cacao nibs
- ¼ cup Nutella or any hazelnut spread
- ¼ cup peanut butter chips
- ⅓ cup crushed peanuts (or other nuts like pecans, almonds, walnuts)
- ⅓ cup dried fruit (cranberries, raisins, sultanas, chopped dates)
- 1–2 teaspoons pure vanilla extract (adjust to your taste preference)
- ¼ cup shredded coconut
Instructions
- Preheat the Oven: Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper.
- Mash the Bananas: In a large bowl, mash the ripe bananas until smooth.
- Combine Dry Ingredients: Add the quick oats to the mashed bananas and mix well to combine.
- Add Optional Ingredients: Stir in your desired add-ins, such as nut butter, chocolate chips, honey, cacao nibs, Nutella, peanut butter chips, crushed nuts, dried fruit, vanilla extract, and shredded coconut. Mix everything until well combined.
- Shape the Cookies: Scoop out tablespoon-sized portions of dough and place them on the prepared baking sheet, flattening each one slightly with the back of a spoon.
- Bake: Bake the cookies for 10-12 minutes, or until they are golden around the edges.
- Cool: Allow the cookies to cool on the baking sheet for a few minutes before transferring them to a wire rack to cool completely.
