Description

Traditional British flapjacks made with quick-cook rolled oats, golden syrup, and a delightful mix of pumpkin seeds and cranberries. These chewy, golden bars are perfect as a wholesome snack or on-the-go treat, packed with natural sweetness and crunch.

  • 2 cups quick cook rolled oats (about 180 grams)

  • ½ cup golden syrup (about 160 grams)

  • ½ cup butter (about 115 grams)

  • ½ cup brown sugar (about 110 grams)

  • ½ cup pumpkin seeds (about 60 grams)

  • ½ cup dried cranberries (about 60 grams)


Instructions

  1. Preheat oven to 350°F (175°C).

  2. Line a baking pan (8-inch square recommended) with parchment paper.

  3. In a large bowl, toss together oats, pumpkin seeds, and dried cranberries.

  4. In a saucepan, gently warm butter, brown sugar, and golden syrup over low heat until melted and combined.

  5. Pour the warm syrup mixture over the oat mixture and stir well to combine.

  6. Press the mixture firmly into the prepared baking pan.

  7. Bake for about 25 minutes or until golden brown.

  8. Allow to cool completely before cutting into bars.

Notes

Pressing the mixture firmly ensures the flapjacks hold together well.

Letting them cool fully before slicing prevents crumbling.
