  • 2 large eggs

  • 1 teaspoon garlic powder
  • 1/2 teaspoon paprika
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 2 tablespoons olive oil (for frying or brushing if baking)

Instructions

  • Prepare the Vegetables: In a large bowl, combine the shredded cabbage, grated carrot, and chopped green onions. Mix well.
  • Make the Batter: Add the eggs, flour, garlic powder, paprika, salt, and black pepper to the bowl. Mix until the cabbage and carrots are well-coated with the batter.
  • For Fried Fritters: Heat 2 tablespoons of olive oil in a large skillet over medium heat. Scoop about 2 tablespoons of the cabbage mixture and drop it into the skillet. Flatten it slightly with a spoon. Fry for 2-3 minutes on each side until golden brown and crispy. Transfer to a paper towel-lined plate to drain excess oil.
  • For Baked Fritters: Preheat the oven to 400°F (200°C) and line a baking sheet with parchment paper. Scoop the cabbage mixture onto the baking sheet, flattening each portion slightly. Brush the tops with a little olive oil. Bake for 20-25 minutes, flipping halfway through, until golden and crispy.
