For the Bottom Layer:

  • 1/2 cup unsalted butter, melted
  • 1/4 cup granulated sugar
  • 5 tablespoons cocoa powder
  • 1 large egg, beaten
  • 1 3/4 cups graham cracker crumbs
  • 1 cup shredded coconut
  • 1/2 cup chopped walnuts (optional)

For the Middle Layer:

  • 1/2 cup unsalted butter, softened
  • 2 cups powdered sugar
  • 2 tablespoons vanilla custard powder (or instant vanilla pudding mix)
  • 2 tablespoons brewed espresso or strong coffee (cooled)
  • 1 teaspoon vanilla extract

For the Top Layer:

  • 4 oz semi-sweet chocolate, chopped
  • 2 tablespoons unsalted butter

Instructions

  1. In a medium bowl, combine melted butter, sugar, cocoa powder, and beaten egg. Mix well.
  2. Stir in the graham cracker crumbs, shredded coconut, and walnuts (if using).
  3. Press the mixture evenly into the bottom of a greased 9×9-inch pan. Set aside.

For the Middle Layer:

  1. In a mixing bowl, beat together the softened butter, powdered sugar, custard powder, brewed espresso, and vanilla extract until smooth and creamy.
  2. Spread the mixture evenly over the bottom layer in the pan. Refrigerate for 30 minutes to set.

For the Top Layer:

  1. In a small saucepan, melt the chocolate and butter together over low heat, stirring constantly until smooth.
  2. Pour the melted chocolate mixture over the middle layer and spread evenly to cover the entire surface.
  3. Refrigerate for at least 1 hour, or until the bars are firm and set.
