- 2 large eggs
- 1 teaspoon vanilla extract

- 1 teaspoon baking soda

- 2 cups semisweet chocolate chips
- 12 caramel candies, unwrapped
Instructions
- Preheat the oven to 350°F (175°C) and line a baking sheet with parchment paper.
- In a large bowl, cream together the butter, brown sugar, and granulated sugar until smooth.
- Beat in the eggs one at a time, then stir in the vanilla extract.
- In a separate bowl, combine the flour, baking soda, and salt. Gradually add this dry mixture to the creamed butter mixture, mixing until just combined.
- Fold in the chocolate chips.
- Take a small amount of cookie dough and flatten it in your hands. Place one caramel candy in the center, then cover with more dough to seal the caramel inside.
- Place the cookie dough balls onto the prepared baking sheet, spacing them about 2 inches apart.
- Bake for 10-12 minutes, or until the edges are golden and the center is set.
- Allow cookies to cool on the baking sheet for a few minutes before transferring to a wire rack to cool completely.
Notes
- For extra flavor, you can sprinkle a pinch of sea salt on top of the cookies before baking to enhance the caramel taste.
- If you prefer a chewier cookie, you can chill the dough for 30 minutes before baking.
- If you don’t have caramel candies, you can use caramel sauce in the center, but be mindful of the quantity to avoid excess mess.
