  • 1/2 cup granulated sugar
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 3 cups all-purpose flour
  • 1 teaspoon baking soda
  • 1/2 teaspoon salt
  • 2 cups semisweet chocolate chips
  • 12 caramel candies, unwrapped

Instructions

  • Preheat the oven to 350°F (175°C) and line a baking sheet with parchment paper.
  • In a large bowl, cream together the butter, brown sugar, and granulated sugar until smooth.
  • Beat in the eggs one at a time, then stir in the vanilla extract.
  • In a separate bowl, combine the flour, baking soda, and salt. Gradually add this dry mixture to the creamed butter mixture, mixing until just combined.
  • Fold in the chocolate chips.
  • Take a small amount of cookie dough and flatten it in your hands. Place one caramel candy in the center, then cover with more dough to seal the caramel inside.
  • Place the cookie dough balls onto the prepared baking sheet, spacing them about 2 inches apart.
  • Bake for 10-12 minutes, or until the edges are golden and the center is set.
  • Allow cookies to cool on the baking sheet for a few minutes before transferring to a wire rack to cool completely.

Notes

  • For extra flavor, you can sprinkle a pinch of sea salt on top of the cookies before baking to enhance the caramel taste.
  • If you prefer a chewier cookie, you can chill the dough for 30 minutes before baking.
  • If you don’t have caramel candies, you can use caramel sauce in the center, but be mindful of the quantity to avoid excess mess.
