1 tablespoon olive oil

1 pound ground beef

1 small yellow onion, finely diced

2 cloves garlic, minced

1 packet taco seasoning

2¼ cups beef broth

1 (10 oz) can Rotel (diced tomatoes with green chilies)

2 tablespoons tomato paste

1½ cups long grain white rice (dry, uncooked)

2 cups shredded cheese (any variety)
Instructions

Brown Beef and Onions
In a large skillet over medium-high heat, heat olive oil. Add ground beef and onion. Cook for 8–10 minutes, breaking up the beef, until browned and onions are soft. Drain excess grease. -
Add Seasonings
Add minced garlic and taco seasoning. Stir to combine and cook for 30 seconds. -
Add Liquids and Rice
Stir in beef broth, Rotel, and tomato paste. Bring to a boil. Once boiling, add the rice and return to a boil. -
Simmer
Cover with a lid, reduce heat to low, and simmer for 15 minutes, or until rice is cooked and liquid absorbed. -
Add Cheese
Sprinkle cheese evenly over the top. Cover again and cook for 5 more minutes, or until cheese is melted. -
Serve
Serve hot with toppings like sour cream, guacamole, pico de gallo, or chopped cilantro.
Notes
Garlic: Fresh, jarred, or garlic paste all work. Sub with 1 tsp garlic powder if needed.
Spice Level: Use spicy Rotel, pepper jack, or jalapeños for heat; keep it mild with Colby Jack and mild Rotel.
Pan Size: Use a large, deep skillet with a lid to hold all the ingredients comfortably.
Storage: Refrigerate leftovers in an airtight container for up to 3 days. Reheat gently on the stove or microwave.
