Ingredients
Scale
For the Crust:
- 1 ½ cups graham cracker crumbs
- 6 tbsp butter, melted
- 2 tbsp sugar (optional)
For the Ice Cream Filling:
- 1 ½ quarts cherry ice cream, softened
- ½ cup chocolate chips
- 1 cup maraschino cherries, chopped (or fresh cherries if preferred)
- ¼ cup heavy cream (optional, for smoothness)
For the Topping:
- Whipped cream (optional)
- Additional chocolate chips or shaved chocolate (optional)
- Maraschino cherries for garnish (optional)
Instructions
- Prepare the Crust:
- Preheat your oven to 350°F (175°C).
- In a medium bowl, combine graham cracker crumbs, melted butter, and sugar. Stir until fully combined.
- Press the mixture into the bottom of a pie pan to form an even crust.
- Bake the crust for 8-10 minutes, until slightly golden. Remove from the oven and let it cool completely.
- Make the Ice Cream Filling:
- While the crust cools, soften the cherry ice cream by letting it sit at room temperature for about 10-15 minutes.
- In a bowl, fold in the chocolate chips and chopped maraschino cherries into the softened ice cream.
- If the ice cream seems too thick, you can add heavy cream to smooth it out.
- Assemble the Pie:
- Once the crust has cooled, spoon the cherry chocolate chip ice cream mixture into the pie crust. Spread it out evenly to fill the crust.
- Freeze the pie for at least 4 hours, or until the ice cream is firm.
- Serve:
- Before serving, top the pie with whipped cream, extra chocolate chips or shaved chocolate, and a maraschino cherry for garnish.
- Slice and enjoy!
Notes
- You can use fresh cherries for a more natural flavor or opt for maraschino cherries for a sweeter twist.
- If you want to make the pie extra decadent, you can add a drizzle of hot fudge or chocolate sauce on top when serving.
- Make sure the ice cream is softened for easier mixing.
