Description

These Cherry Pistachio Cheesecake Bars are a perfect blend of creamy cheesecake with a crunchy graham cracker crust, topped with sweet cherry pie filling and pistachios for an indulgent treat. A delightful dessert that’s sure to impress with every bite!

Ingredients

Scale
  • 1 1/2 cups graham cracker crumbs
  • 1/2 cup unsalted butter, melted
  • 16 oz cream cheese, softened
  • 1 cup granulated sugar
  • 1 tsp vanilla extract
  • 3 large eggs
  • 1 cup sour cream
  • 1/2 cup chopped pistachios
  • 1 1/2 cups cherry pie filling

Instructions

  • Preheat the oven to 350°F (175°C).
  • In a bowl, mix graham cracker crumbs and melted butter. Press the mixture into the bottom of a 9×13-inch baking dish to form the crust.
  • In a separate bowl, beat the cream cheese, sugar, and vanilla extract until smooth. Add the eggs one at a time, mixing well after each addition. Stir in the sour cream.
  • Pour the cream cheese mixture over the crust. Bake for 25-30 minutes, or until the center is set.
  • Cool completely, then spread the cherry pie filling over the top. Sprinkle with chopped pistachios.
  • Chill in the refrigerator for at least 3 hours before cutting into bars. Enjoy!

Notes

  • If you prefer a thicker layer of cherry pie filling, you can increase the amount used or add fresh cherries on top.
  • The pistachios add a wonderful crunch, but feel free to substitute them with other nuts like almonds or walnuts.
  • For a creamier texture, you can add a little extra sour cream or use full-fat cream cheese.
