- 1 1/2 cups graham cracker crumbs
- 1/2 cup unsalted butter, melted
- 16 oz cream cheese, softened
- 1 cup granulated sugar
- 1 tsp vanilla extract
- 3 large eggs
- 1 cup sour cream
- 1/2 cup chopped pistachios
- 1 1/2 cups cherry pie filling
Instructions
- Preheat the oven to 350°F (175°C).
- In a bowl, mix graham cracker crumbs and melted butter. Press the mixture into the bottom of a 9×13-inch baking dish to form the crust.
- In a separate bowl, beat the cream cheese, sugar, and vanilla extract until smooth. Add the eggs one at a time, mixing well after each addition. Stir in the sour cream.
- Pour the cream cheese mixture over the crust. Bake for 25-30 minutes, or until the center is set.
- Cool completely, then spread the cherry pie filling over the top. Sprinkle with chopped pistachios.
- Chill in the refrigerator for at least 3 hours before cutting into bars. Enjoy!
Notes
- If you prefer a thicker layer of cherry pie filling, you can increase the amount used or add fresh cherries on top.
- The pistachios add a wonderful crunch, but feel free to substitute them with other nuts like almonds or walnuts.
- For a creamier texture, you can add a little extra sour cream or use full-fat cream cheese.
