Ingredients
Scale
For the Chicken:
- 2 large Chicken Breasts, boneless and skinless
- 1 tbsp Olive Oil
- Salt and Pepper, to taste
- 1/2 tsp Garlic Powder
- 1/2 tsp Italian Seasoning
For the Alfredo Sauce:
- 1/2 cup Unsalted Butter
- 3 cloves Garlic, minced
- 1 cup Heavy Cream
- 1 cup Whole Milk
- 1 1/2 cups Freshly Grated Parmesan Cheese
- 1/2 cup Grated Mozzarella Cheese (optional, for extra creaminess)
- Salt and Pepper, to taste
- 1/4 tsp Nutmeg (optional, for added flavor)
For the Pasta:
- 12 oz Fettuccine Pasta (or pasta of choice)
Garnish (optional):
- Fresh Parsley, chopped
- Extra Parmesan Cheese, grated
Instructions
- Cook the pasta: In a large pot of salted boiling water, cook the fettuccine according to package instructions until al dente. Drain and set aside.
- Prepare the chicken: While the pasta is cooking, season the chicken breasts with olive oil, salt, pepper, garlic powder, and Italian seasoning.
- In a large skillet, heat olive oil over medium heat. Add the seasoned chicken breasts and cook for 6-7 minutes per side until golden and cooked through. Remove from the skillet and let the chicken rest for a few minutes before slicing into strips or cubes.
- Make the Alfredo sauce: In the same skillet, melt the butter over medium heat. Add the minced garlic and sauté for 1-2 minutes until fragrant.
- Add the heavy cream and whole milk, stirring to combine. Let the mixture simmer for about 3-4 minutes, stirring frequently.
- Gradually whisk in the grated Parmesan cheese and mozzarella (if using), and cook for another 2-3 minutes, stirring until the sauce becomes smooth and thickened. Season with salt, pepper, and nutmeg (if using).
- Combine everything: Add the cooked pasta to the skillet and toss until evenly coated in the Alfredo sauce.
- Top with sliced chicken and garnish with fresh parsley and additional Parmesan cheese if desired. Serve immediately and enjoy!
Notes
- If the sauce becomes too thick, you can add a little extra milk or cream to reach your desired consistency.
- For extra flavor, add a dash of white wine to the sauce as it simmers.
- You can add vegetables like broccoli or spinach for extra nutrition and flavor.
- To make it a bit lighter, you can swap out the heavy cream for half-and-half or use a lighter version of the Alfredo sauce.
