  • 1 lb boneless, skinless chicken breasts
  • 1 cup bread crumbs
  • 1/2 cup grated Parmesan cheese (for coating)
  • 1 tsp garlic powder
  • 1/2 tsp salt
  • 1/4 tsp black pepper
  • 2 eggs
  • 2 tbsp olive oil
  • 8 oz pasta
  • 1 cup heavy cream
  • 1/2 cup grated Parmesan cheese (for sauce)
  • 1/4 cup chopped fresh parsley

Instructions

  • Preheat oven to 400°F and line a baking sheet with parchment paper.
  • Cut chicken breasts into bite-sized pieces.
  • In a shallow dish, combine bread crumbs, 1/2 cup Parmesan cheese, garlic powder, salt, and black pepper.
  • In another dish, beat eggs.
  • Dip chicken pieces into the beaten eggs, then coat with the bread crumb mixture.
  • Place coated chicken pieces on the prepared baking sheet and drizzle with olive oil.
  • Bake in preheated oven for 20-25 minutes or until the chicken is cooked through and crispy.
  • Cook pasta according to package instructions.
  • In a saucepan, heat heavy cream and 1/2 cup Parmesan cheese over low heat until the cheese is melted and the sauce is smooth.
  • Toss the cooked pasta in the creamy Parmesan sauce.
  • Serve the crispy chicken bites on top of the creamy Parmesan pasta and garnish with chopped parsley.

Notes

  • For an extra touch, add a sprinkle of extra Parmesan on top of the finished dish before serving.
  • If you prefer your chicken extra crispy, you can broil it for 1-2 minutes after baking.
