- 1 lb boneless, skinless chicken breasts
- 1 cup bread crumbs
- 1/2 cup grated Parmesan cheese (for coating)
- 1 tsp garlic powder
- 1/2 tsp salt
- 1/4 tsp black pepper
- 2 eggs
- 2 tbsp olive oil
- 8 oz pasta
- 1 cup heavy cream
- 1/2 cup grated Parmesan cheese (for sauce)
- 1/4 cup chopped fresh parsley
Instructions
- Preheat oven to 400°F and line a baking sheet with parchment paper.
- Cut chicken breasts into bite-sized pieces.
- In a shallow dish, combine bread crumbs, 1/2 cup Parmesan cheese, garlic powder, salt, and black pepper.
- In another dish, beat eggs.
- Dip chicken pieces into the beaten eggs, then coat with the bread crumb mixture.
- Place coated chicken pieces on the prepared baking sheet and drizzle with olive oil.
- Bake in preheated oven for 20-25 minutes or until the chicken is cooked through and crispy.
- Cook pasta according to package instructions.
- In a saucepan, heat heavy cream and 1/2 cup Parmesan cheese over low heat until the cheese is melted and the sauce is smooth.
- Toss the cooked pasta in the creamy Parmesan sauce.
- Serve the crispy chicken bites on top of the creamy Parmesan pasta and garnish with chopped parsley.
Notes
- For an extra touch, add a sprinkle of extra Parmesan on top of the finished dish before serving.
- If you prefer your chicken extra crispy, you can broil it for 1-2 minutes after baking.
