Description

A comforting and hearty Chicken Bolognese with Fettuccine recipe that features tender ground chicken simmered in a rich tomato sauce with aromatic vegetables and Italian herbs, served over silky fettuccine noodles for an easy and satisfying weeknight dinner.

Ingredients

Scale

Main Ingredients

  • 1 pound ground chicken
  • 12 ounces fettuccine pasta
  • 1 medium onion, finely chopped
  • 3 cloves garlic, minced
  • 1 can (14 ounces) canned tomatoes
  • 1 medium carrot, finely chopped
  • 2 stalks celery, finely chopped
  • 2 tablespoons olive oil
  • 1 teaspoon dried basil
  • 1 teaspoon dried oregano
  • 1/2 teaspoon dried thyme
  • Salt and pepper, to taste
  • 1/2 cup freshly grated Parmesan cheese, for serving

Instructions

  1. Prepare Ingredients: Finely chop the onion, garlic, carrot, and celery. Have your canned tomatoes and dried herbs ready to ensure a smooth cooking process.
  2. Sauté the Vegetables: Heat olive oil in a large skillet over medium heat. Add the chopped onion, carrot, and celery and cook until softened and fragrant, about 5 minutes. Add garlic and cook for another minute without burning it.
  3. Cook the Ground Chicken: Add ground chicken to the skillet. Break it apart with a spoon and cook until no longer pink and slightly browned for extra flavor.
  4. Add Tomatoes and Herbs: Pour in the canned tomatoes, crushing them gently with your spoon. Stir in dried basil, oregano, thyme, salt, and pepper. Reduce heat to low and simmer uncovered for 15-20 minutes, allowing the sauce to thicken and flavors to meld.
  5. Boil the Fettuccine: Meanwhile, bring a large pot of salted water to a boil. Cook fettuccine according to package directions until al dente. Drain the pasta, reserving 1 cup of pasta water.
  6. Combine Pasta and Sauce: Toss cooked fettuccine with the chicken bolognese sauce. If the sauce is too thick, add a splash of reserved pasta water to loosen it to desired consistency. Serve topped with freshly grated Parmesan cheese.

Notes

  • Use fresh herbs like basil or thyme when possible for brighter aroma.
  • Do not overcook the chicken to keep it tender and moist.
  • Save pasta water to help loosen and bind the sauce to the noodles.
  • Allow the sauce to simmer to deepen the flavors.
  • Finish with freshly grated Parmesan cheese for enhanced umami and creaminess.
