- 1 cup chopped onion
- 1 cup chopped celery
- 1 cup chopped carrots
- 2 cloves garlic, minced
- 8 cups chicken broth
- 2 cups shredded cooked chicken
- 2 cups egg noodles
- 1 teaspoon dried thyme
- Salt and pepper to taste
- Chopped fresh parsley for garnish
Instructions
- In a large pot, heat olive oil over medium heat. Add onion, celery, and carrots. Cook until vegetables are tender.
- Add garlic and cook for an additional minute.
- Pour in chicken broth and bring to a boil.
- Stir in shredded chicken, egg noodles, thyme, salt, and pepper. Simmer until noodles are cooked.
- Serve hot, garnished with fresh parsley.
Notes
