This Chocolate Cherry Dream Roll is a decadent, light, and fluffy dessert filled with whipped cream and topped with fresh cherries. A light sponge cake rolled up with sweet cream and finished with chocolate shavings, this dessert is perfect for any occasion!

- 3/4 cup granulated sugar
- 1/4 cup water
- 1 teaspoon vanilla extract
- 1 cup all-purpose flour
- 1 teaspoon baking powder
- 1/4 teaspoon salt
- 1/4 cup powdered sugar
- 1 1/2 cups whipped cream
- 1 cup cherries, pitted and halved
- Chocolate shavings, for garnish
Instructions
- Preheat the oven: Preheat oven to 375°F (190°C). Line a jelly roll pan with parchment paper.
- Prepare the batter: In a large mixing bowl, beat eggs and granulated sugar until thick and pale yellow. Stir in water and vanilla extract.
- Add dry ingredients: In a separate bowl, sift together flour, baking powder, and salt. Gradually fold into the egg mixture.
- Bake the cake: Pour batter into prepared pan and spread evenly. Bake for 12-15 minutes, or until lightly golden.
- Prepare to roll: While still warm, sprinkle powdered sugar over the cake and invert onto a clean kitchen towel. Carefully remove parchment paper.
- Roll and cool: Roll up the cake with the towel and let it cool completely.
- Fill the cake: Unroll the cake and spread whipped cream over the surface. Top with cherries.
- Roll again: Roll up the cake again and refrigerate for at least 1 hour.
- Garnish and serve: Before serving, garnish with chocolate shavings. Slice and enjoy!
Notes
- Be sure to roll the cake while it’s still warm to prevent cracking.
- You can use other fruit, such as strawberries or raspberries, for a different flavor twist.
