For the Cookie Dough Layer:
- ½ cup soft butter
- ½ cup packed brown sugar
- ¼ cup white sugar
- 2 tbsp milk
- 1 tsp vanilla extract
- 1 cup plain flour
- ½ cup chocolate chips
For the Topping:
- ½ cup melted chocolate chips
- Extra chocolate chips for garnish
Instructions
- Prepare the Brownie Layer:
- Preheat your oven to 350°F (175°C) and grease or line a mini muffin tin with paper liners.
- In a medium bowl, mix together the melted butter, white sugar, eggs, and vanilla extract until well combined.
- Sift the cocoa powder, plain flour, salt, and baking powder into the wet ingredients and mix until smooth.
- Spoon the brownie batter into the mini muffin tin, filling each cup about halfway. Bake for 10-12 minutes or until a toothpick comes out clean. Let the brownies cool completely.
- Prepare the Cookie Dough Layer:
- In a medium bowl, cream together the softened butter, brown sugar, and white sugar until light and fluffy.
- Add the milk and vanilla extract, mixing until combined.
- Gradually add the flour, mixing until the dough comes together. Stir in the chocolate chips.
- Once the brownies have cooled, scoop a spoonful of cookie dough and gently flatten it to place on top of each brownie. Press down lightly to ensure the cookie dough sticks.
- Finish with Chocolate Topping:
- Melt the chocolate chips in the microwave in 30-second intervals, stirring after each. Once melted, drizzle the chocolate over the cookie dough layer.
- Garnish with additional chocolate chips on top.
- Chill and Serve:
- Refrigerate the brownie bites for at least 30 minutes to set the chocolate topping. Once set, remove from the tin and serve chilled or at room temperature.
