  • 1 tsp vanilla extract
  • 1 cup plain flour
  • ½ cup chocolate chips

For the Topping:

  • ½ cup melted chocolate chips
  • Extra chocolate chips for garnish

Instructions

  • Prepare the Brownie Layer:
    • Preheat your oven to 350°F (175°C) and grease or line a mini muffin tin with paper liners.
    • In a medium bowl, mix together the melted butter, white sugar, eggs, and vanilla extract until well combined.
    • Sift the cocoa powder, plain flour, salt, and baking powder into the wet ingredients and mix until smooth.
    • Spoon the brownie batter into the mini muffin tin, filling each cup about halfway. Bake for 10-12 minutes or until a toothpick comes out clean. Let the brownies cool completely.
  • Prepare the Cookie Dough Layer:
    • In a medium bowl, cream together the softened butter, brown sugar, and white sugar until light and fluffy.
    • Add the milk and vanilla extract, mixing until combined.
    • Gradually add the flour, mixing until the dough comes together. Stir in the chocolate chips.
    • Once the brownies have cooled, scoop a spoonful of cookie dough and gently flatten it to place on top of each brownie. Press down lightly to ensure the cookie dough sticks.
  • Finish with Chocolate Topping:
    • Melt the chocolate chips in the microwave in 30-second intervals, stirring after each. Once melted, drizzle the chocolate over the cookie dough layer.
    • Garnish with additional chocolate chips on top.
  • Chill and Serve:
    • Refrigerate the brownie bites for at least 30 minutes to set the chocolate topping. Once set, remove from the tin and serve chilled or at room temperature.
