These Chocolate Chip Cookie Ice Cream Sandwiches are the perfect treat for any occasion. Soft, chewy chocolate chip cookies paired with creamy vanilla ice cream make for an irresistible dessert that’s perfect for summer or any time you’re craving a sweet indulgence.


Ingredients

  • 1 cup unsalted butter, softened
  • 1 cup granulated sugar
  • 1 cup packed brown sugar
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 3 cups all-purpose flour
  • 1 teaspoon baking soda
  • 1/2 teaspoon salt
  • 2 cups semisweet chocolate chips
  • 1.5 quarts vanilla ice cream

Instructions

  • Preheat oven to 350°F (175°C). Line a baking sheet with parchment paper.
  • In a large mixing bowl, cream together the butter, granulated sugar, and brown sugar until smooth.
  • Beat in the eggs one at a time, then stir in the vanilla extract.
  • In a separate bowl, combine the flour, baking soda, and salt. Gradually add the dry ingredients to the wet ingredients and mix well.
  • Fold in the chocolate chips.
  • Drop rounded tablespoons of dough onto the prepared baking sheet. Flatten each cookie slightly with the back of a spoon.
  • Bake in the preheated oven for 10-12 minutes or until the edges are golden brown. Allow cookies to cool completely.
  • Once cookies are cooled, place a scoop of vanilla ice cream between two cookies and gently press together to form a sandwich.
  • Serve immediately or wrap individually in plastic wrap and freeze until ready to eat

Notes

  • f you prefer a firmer ice cream sandwich, freeze the assembled sandwiches for 30 minutes before serving.
  • You can also use chocolate or other flavored ice cream for variety.
