Description

These decadent Chocolate Covered Strawberry Brownies are a perfect combination of rich, fudgy brownies topped with fresh strawberries and smooth, silky chocolate ganache. A delightful twist on the classic brownie that will impress everyone with its sweet, fruity, and chocolatey layers!

Ingredients

Scale

For the Brownies:

  • 1 cup (2 sticks) unsalted butter

  • 2 cups granulated sugar

  • 4 large eggs

  • 1 teaspoon vanilla extract

  • 1 cup all-purpose flour

  • 1 cup unsweetened cocoa powder

  • 1/2 teaspoon salt

  • 1 teaspoon baking powder

For the Topping:

  • 1 pint fresh strawberries, hulled and halved

  • 1 cup semi-sweet chocolate chips

  • 1/2 cup heavy cream

Instructions

  • Prepare the Brownie Batter:

    • Preheat your oven to 350°F (175°C). Grease and line a 9×13-inch baking pan with parchment paper or cooking spray.

    • In a saucepan, melt the butter over low heat. Once melted, remove from heat and whisk in the sugar, eggs, and vanilla extract.

    • In a separate bowl, combine the flour, cocoa powder, salt, and baking powder.

    • Gradually fold the dry ingredients into the wet ingredients, mixing until just combined. Do not overmix.

  • Bake the Brownies:

    • Pour the brownie batter into the prepared pan and smooth the top.

    • Bake in the preheated oven for 30-35 minutes, or until a toothpick inserted into the center comes out with only a few moist crumbs (not wet batter).

    • Allow the brownies to cool completely in the pan before adding the topping.

  • Prepare the Chocolate Ganache:

    • While the brownies cool, prepare the chocolate topping. In a small saucepan, heat the heavy cream over medium heat until it starts to simmer (not boil).

    • Remove the cream from the heat and stir in the semi-sweet chocolate chips. Let the mixture sit for 2-3 minutes, then stir until smooth and glossy.

  • Assemble the Brownies:

    • Once the brownies are cooled, pour the chocolate ganache over the top and spread it evenly with a spatula.

    • Arrange the halved strawberries on top of the ganache, pressing them gently into the chocolate.

  • Serve:

    • Allow the ganache to set at room temperature for 15-20 minutes, or refrigerate for quicker setting. Slice and serve.

Notes

  • For a richer flavor, you can use dark chocolate chips instead of semi-sweet.

  • You can also drizzle additional melted chocolate over the top for an extra touch of chocolate.

  • These brownies are best enjoyed the day they’re made, but they will stay fresh for up to 3 days when stored in an airtight container at room temperature.
