- 1 cup granulated sugar
- 1 egg
- 1 teaspoon vanilla extract

- 1/2 cup cocoa powder
- 1/2 teaspoon salt
- 1 cup chocolate chips
- 1/2 cup heavy cream
Instructions
- Preheat the oven to 350°F (175°C) and line a baking sheet with parchment paper.
- In a large bowl, cream together the butter and sugar until light and fluffy. Beat in the egg and vanilla extract.
- In a separate bowl, whisk together the flour, cocoa powder, and salt. Gradually add the dry ingredients to the wet ingredients and mix until just combined.
- Roll the dough into 1-inch balls and place them on the prepared baking sheet. Flatten each ball with the bottom of a glass.
- Bake for 8-10 minutes, then transfer the cookies to a wire rack to cool completely.
- In a small saucepan, heat the chocolate chips and heavy cream over low heat until smooth and creamy.
- Spread the ganache on the bottom of one cookie and sandwich another cookie on top. Repeat with the remaining cookies.
- Allow the cookies to set before serving.
