- 8 oz semisweet chocolate, chopped
- 2 tbsp unsalted butter
- 3 large eggs
- 1/4 cup granulated sugar
- 1 cup heavy cream
- 1 tsp vanilla extract
Instructions
- In a heatproof bowl, melt the chocolate and butter together, stirring occasionally. Let cool slightly.
- Separate the eggs, placing the yolks in one bowl and the whites in another.
- Whisk the egg yolks and sugar together until pale and thick.
- Slowly whisk the chocolate mixture into the egg yolks.
- In a separate bowl, whip the cream until soft peaks form.
- Fold the whipped cream into the chocolate mixture.
- In another bowl, beat the egg whites until stiff peaks form.
- Gently fold the egg whites into the chocolate mixture.
- Divide the mousse into serving dishes and refrigerate for at least 2 hours before serving.
