Ingredients

  • 8 oz semisweet chocolate, chopped
  • 2 tbsp unsalted butter
  • 3 large eggs
  • 1/4 cup granulated sugar
  • 1 cup heavy cream
  • 1 tsp vanilla extract

Instructions

  • In a heatproof bowl, melt the chocolate and butter together, stirring occasionally. Let cool slightly.
  • Separate the eggs, placing the yolks in one bowl and the whites in another.
  • Whisk the egg yolks and sugar together until pale and thick.
  • Slowly whisk the chocolate mixture into the egg yolks.
  • In a separate bowl, whip the cream until soft peaks form.
  • Fold the whipped cream into the chocolate mixture.
  • In another bowl, beat the egg whites until stiff peaks form.
  • Gently fold the egg whites into the chocolate mixture.
  • Divide the mousse into serving dishes and refrigerate for at least 2 hours before serving.

  • Be gentle when folding the whipped cream and egg whites into the chocolate mixture to keep the mousse light and airy.
