Instructions

  • Prepare the Dates:
    Slice each pitted date down the middle (not all the way through) to create a small pocket. Remove any remaining pits. Place the dates on a baking sheet lined with parchment paper.
  • Stuff the Dates:
    Spoon a small amount of peanut butter (about 1 teaspoon) into each date pocket. Gently press a few chopped peanuts into the peanut butter to add a crunchy element.
  • Melt the Chocolate:
    In a microwave-safe bowl, melt the dark chocolate and coconut oil together. Heat in 30-second increments, stirring in between, until completely melted and smooth.
  • Assemble the Bark:
    Drizzle the melted chocolate over the stuffed dates, ensuring each date is generously coated. Use a spoon or a brush to smooth out the chocolate if necessary.
  • Chill:
    Place the baking sheet with the dates in the refrigerator for at least 30 minutes to allow the chocolate to harden.
  • Serve:
