- 1 1/2 cups graham cracker crumbs
- 1/4 cup sugar
- 1/2 cup butter, melted
- 3 (8 oz) packages cream cheese, softened
- 1 cup sugar
- 1 tsp vanilla extract
- 3 eggs
- 1 cup chocolate chips
- 1/2 cup heavy cream
- 1 cup sliced strawberries
Instructions
- Preheat oven to 325°F (165°C).
- In a medium bowl, mix graham cracker crumbs, 1/4 cup sugar, and melted butter. Press the mixture onto the bottom of a 9-inch springform pan.
- In a large bowl, beat cream cheese, 1 cup sugar, and vanilla extract until well blended. Add eggs one at a time, mixing on low speed after each addition.
- Pour the cream cheese mixture over the crust and bake for 55 minutes or until the center is almost set.
- Refrigerate the cheesecake for at least 4 hours or overnight to set.
- In a small saucepan, melt chocolate chips with heavy cream. Stir until smooth and spread the chocolate ganache over the cooled cheesecake.
- Arrange sliced strawberries on top of the cheesecake.
- Refrigerate for another hour before serving to allow the ganache to set.
Notes
- For a firmer cheesecake, ensure it is refrigerated for the full 4 hours or overnight.
- You can use any type of chocolate chips for the ganache, dark or milk chocolate depending on your preference.
