- 1 small onion (finely diced)
- 2 cups shredded Mexican blend cheese or Monterey Jack
- 1 cup shredded mozzarella cheese

- 1 tablespoon olive oil
- Fresh cilantro (for garnish)
- Warm tortillas or tortilla chips (for serving)
Instructions
- In a skillet, heat the olive oil over medium heat. Add the diced onion and cook for 2-3 minutes, until softened.
- Add the chorizo sausage to the skillet and cook, breaking it apart with a spoon, for 5-7 minutes, until browned and cooked through. If desired, add the diced jalapeño at this point and cook for an additional minute.
- Lower the heat and add both the shredded Mexican blend cheese and shredded mozzarella cheese to the skillet. Stir continuously until the cheese melts and becomes a smooth, creamy mixture.
- Once the cheese is fully melted and combined with the chorizo, remove from heat.
- Transfer the queso fundido to a serving dish and garnish with fresh cilantro.
- Serve immediately with warm tortillas or tortilla chips for dipping.
Notes
- For a smoky flavor, you can use smoked mozzarella or add a dash of smoked paprika to the chorizo while cooking.
- If you want a spicier dip, leave the seeds in the jalapeño or add more to taste.
