This decadent cinnamon roll cake combines the rich flavors of cinnamon rolls with the ease of a cake. Topped with a creamy, sweet cream cheese icing, it’s the perfect dessert for any occasion.


Ingredients

  • 1 cup unsalted butter, softened
  • 1 cup granulated sugar
  • 2 large eggs
  • 1 tsp vanilla extract
  • 3 cups all-purpose flour
  • 1 tsp salt
  • 1 tsp baking powder
  • 1/2 tsp baking soda
  • 1 1/2 cups buttermilk

For the Cinnamon Filling:

  • 1/3 cup unsalted butter, melted
  • 1 cup brown sugar
  • 2 tbsp all-purpose flour
  • 1 tbsp ground cinnamon

For the Cream Cheese Icing:

  • 1/2 cup unsalted butter, softened
  • 1 1/2 cups powdered sugar
  • 1 tsp vanilla extract
  • 2 tbsp milk

Instructions

  • Preheat the oven to 350°F (175°C) and grease a 9×13 inch baking pan.
  • In a large bowl, cream together the butter and sugar until light and fluffy.
  • Add the eggs and vanilla extract, beating until smooth.
  • In a separate bowl, whisk together the flour, salt, baking powder, and baking soda.
  • Add the dry ingredients to the wet ingredients, alternating with the buttermilk, beginning and ending with the dry ingredients. Mix until just combined.
  • In a small bowl, whisk together the melted butter, brown sugar, flour, and cinnamon for the cinnamon filling.
  • Pour half of the cake batter into the prepared pan. Sprinkle half of the cinnamon filling over the batter, then swirl it gently with a knife to create a marbled effect.
  • Add the remaining cake batter and top with the remaining cinnamon filling. Swirl again to combine.
  • Bake for 35-40 minutes, or until a toothpick inserted in the center comes out clean.
  • While the cake is baking, prepare the cream cheese icing. In a bowl, beat together the softened butter, powdered sugar, vanilla, and milk until smooth.
  • Allow the cake to cool slightly before drizzling the cream cheese icing over the top.

Notes

  • For extra flavor, you can sprinkle chopped pecans or walnuts on top of the cake before baking.
  • This cake is best served warm with the cream cheese icing.
