- 1 lb beef stew meat
- 1 onion, chopped
- 2 carrots, sliced
- 2 stalks celery, chopped
- 2 cloves garlic, minced
- 1 cup dried lentils
- 6 cups beef broth
- 1 tsp dried thyme
- Salt and pepper to taste
Instructions
- In a large pot, brown the beef stew meat over medium heat.
- Add the chopped onion, sliced carrots, chopped celery, and minced garlic. Sauté until the vegetables begin to soften.
- Add the dried lentils, beef broth, dried thyme, salt, and pepper to the pot.
- Bring the soup to a boil, then reduce the heat and simmer for 1-2 hours, until the beef is tender and the lentils are fully cooked.
- Serve hot and enjoy!
Notes
- For a thicker soup, you can blend a portion of the soup and stir it back in.
- You can also add greens like spinach or kale towards the end of cooking for added nutrition.
