  • 1 cup dried cranberries
  • 1/2 cup balsamic vinegar
  • 1/4 cup soy sauce
  • 1/4 cup honey
  • 3 cloves garlic, minced
  • Salt and pepper to taste

Instructions

  • Preheat your oven to 350°F (175°C).
  • Season the beef roast generously with salt and pepper.
  • In a small bowl, combine dried cranberries, balsamic vinegar, soy sauce, honey, and minced garlic. Mix until the ingredients are well incorporated.
  • Place the beef roast in a roasting pan and pour the cranberry balsamic mixture over the top of the roast.
  • Cover the roasting pan with aluminum foil and roast in the preheated oven for 2 1/2 to 3 hours, or until the beef is cooked to your preferred doneness (use a meat thermometer for accuracy).
  • Once the roast is done, remove it from the oven and let it rest for 10 minutes before slicing. This helps to retain the juices and makes the meat more tender.
