A sprinkle of fresh sage adds a fragrant finish, making this dish a cozy and flavorful meal.

Ingredients

Scale
  • 1 butternut squash
  • 1 lb gnocchi
  • 1 lb sausage
  • 1 cup heavy cream
  • 1/2 cup grated parmesan
  • 2 cloves garlic, minced
  • Salt and pepper to taste
  • Fresh sage leaves for garnish

Instructions

  • Preheat the oven to 400°F (200°C).
  • Cut the butternut squash in half, remove the seeds, and place it on a baking sheet. Roast for 45-50 minutes or until the squash is tender.
  • While the squash is roasting, cook the gnocchi according to package instructions. Drain and set aside.
  • In a skillet, cook the sausage over medium heat until browned. Add the minced garlic and cook for an additional minute.
  • Scoop out the roasted butternut squash and place it in a blender. Add the heavy cream, parmesan, salt, and pepper. Blend until smooth.
  • Pour the butternut squash sauce over the cooked gnocchi and sausage. Stir to combine and heat through.
  • Serve the creamy butternut squash gnocchi with sausage topped with fresh sage leaves.

Notes

  • You can use any type of sausage for this recipe, though Italian sausage works particularly well for added flavor.
  • For a vegan version, use plant-based sausage and substitute the heavy cream and parmesan with dairy-free alternatives.
  • Fresh sage is essential for garnishing, but dried sage can also be used in the sauce if fresh is unavailable.
