-
2 tbsp garlic-infused olive oil (Costabile)

3 tbsp butter
Instructions
-
Cook Pasta:
Bring a large pot of salted water to a boil. Cook gluten-free spaghetti according to package instructions until al dente. Drain and set aside. -
Season Shrimp:
In a bowl, toss shrimp with Cajun seasoning, paprika, garlic powder, oregano, thyme, parsley, salt, and dry shallots. Set aside. -
Sauté Shrimp:
In a large skillet, heat garlic olive oil over medium heat. Add the seasoned shrimp and cook for 2–3 minutes per side until opaque and cooked through. Remove shrimp and set aside. -
Make the Sauce:
In the same skillet, melt butter over medium heat. Stir in tomato sauce and heavy cream, and simmer for 5 minutes until slightly thickened. -
Add Cheeses:
Lower the heat and add parmesan and mozzarella. Stir until the cheese is melted and the sauce is smooth and creamy.
-
Combine:
Add cooked pasta and shrimp to the sauce, tossing everything together until well-coated. Simmer for 1–2 minutes to let the flavors meld.
Notes
Adjust Cajun seasoning to taste if you prefer less or more heat.
This dish is rich—use half-and-half instead of heavy cream for a lighter version.
