- 1/2 cup Chopped Almonds
- 2 stalks Celery, chopped
- 1 Crisp Red or Green Apple, diced
- 2 teaspoons Cajun Seasoning
- 1 tablespoon Dried Parsley
- 4 tablespoons Mayonnaise or Miracle Whip (adjust based on preference)
- 2 tablespoons Sour Cream
Instructions
- In a large mixing bowl, combine the chunk chicken breast, chopped almonds, chopped celery, and diced apple.
- In a small bowl, mix together the Cajun seasoning, dried parsley, mayonnaise (or Miracle Whip), and sour cream until well combined.
- Pour the dressing mixture over the chicken and vegetable mixture. Toss well to coat evenly.
- Taste and adjust seasoning, adding more Cajun seasoning or salt and pepper if needed.
- Chill the chicken salad in the refrigerator for at least 30 minutes before serving to allow the flavors to meld.
- Serve on a bed of greens, on whole-grain bread, or in a wrap for a delicious meal.
