Description

Creamy Chicken Alfredo is a classic Italian-American dish featuring tender chicken breasts, perfectly cooked fettuccine pasta, and a rich, buttery Alfredo sauce made from heavy cream, garlic, and freshly grated parmesan cheese. This comforting and satisfying meal is easy to prepare, customizable, and perfect for weeknight dinners or special occasions.

Ingredients

Scale

Chicken

  • 2 boneless, skinless chicken breasts
  • Salt, to taste
  • Black pepper, to taste
  • 1 tablespoon butter or oil (for cooking chicken)

Pasta

  • 8 oz fettuccine pasta
  • Salt (for pasta water)

Alfredo Sauce

  • 4 tablespoons butter
  • 3 cloves garlic, minced
  • 1 ¼ cups heavy cream
  • 1 cup freshly grated parmesan cheese
  • Salt, to taste
  • Black pepper, to taste

Garnish

  • 2 tablespoons fresh parsley, chopped

Instructions

  1. Prepare the Chicken: Season the chicken breasts with salt and pepper. Heat a skillet over medium-high heat with butter or oil, then cook the chicken for about 6-7 minutes per side until golden brown and cooked through. Remove from skillet and let rest, then slice into strips.
  2. Cook the Pasta: While the chicken rests, bring a large pot of salted water to a boil. Cook the fettuccine pasta according to package directions until al dente. Drain the pasta, reserving a small amount of pasta water, and set aside.
  3. Make the Alfredo Sauce: In the same skillet used for the chicken, melt butter over medium heat. Add the minced garlic and sauté until fragrant, about 1 minute. Pour in the heavy cream, stirring constantly, and allow it to simmer briefly until slightly thickened. Gradually add the freshly grated parmesan cheese, stirring continuously until the sauce is smooth and creamy.
  4. Combine and Serve: Add the cooked pasta and sliced chicken into the Alfredo sauce. Gently toss to coat everything evenly. Adjust seasoning with salt and black pepper to taste. If the sauce is too thick, add reserved pasta water a tablespoon at a time until desired consistency is reached. Garnish with chopped fresh parsley and serve warm.

Notes

  • Use freshly grated parmesan cheese for better flavor and smoother melting.
  • Do not overcook chicken to keep it juicy and tender.
  • Simmer the sauce gently on low to medium heat to prevent cream from separating.
  • Reserve pasta water to adjust sauce consistency without thinning the creaminess.
  • Serve immediately as Alfredo sauce thickens when cooled.
