Description

This Creamy Chicken and Spinach Casserole is the ultimate comfort food—rich, cheesy, and satisfying. Made with tender shredded chicken, fresh or frozen spinach, and a velvety cream cheese and sour cream sauce, it bakes into a golden, bubbling masterpiece. Whether you’re feeding a hungry family or prepping for the week, this low-effort, high-flavor casserole is a cozy, crowd-pleasing favorite. Serve it on its own or pair it with crusty bread, rice, or a fresh salad for a complete meal.

Ingredients

Scale
  • 23 cups cooked and shredded chicken

  • 4 cups fresh spinach (or 1 package frozen spinach, thawed and drained)

  • 8 oz cream cheese, softened

  • ½ cup sour cream

  • 1 cup shredded mozzarella cheese

  • ¼ cup grated Parmesan cheese

  • 2 cloves garlic, minced

  • 1 small onion, finely chopped

  • ½ teaspoon salt

  • ¼ teaspoon black pepper

  • Pinch of nutmeg (optional)

  • Optional Additions: sliced mushrooms, artichoke hearts, or cooked pasta

Instructions

  1. Prepare the Ingredients:
Cook and shred your chicken if it’s not already prepared. If using fresh spinach, sauté it lightly until wilted. For frozen spinach, thaw and drain well.

  2. Make the Sauce:
In a mixing bowl, combine cream cheese, sour cream, garlic, onion, salt, pepper, and nutmeg. Stir until smooth and well blended.

  3. Assemble the Casserole:
Preheat your oven to 375°F (190°C). In a greased casserole dish, layer the shredded chicken and spinach. Pour in the creamy sauce and mix gently to combine.

  4. Add Cheese and Bake:
Sprinkle mozzarella and Parmesan cheese evenly over the top. Bake uncovered for 25–30 minutes, or until the top is golden and bubbling.

  5. Serve and Enjoy:
Let the casserole cool slightly before serving. Enjoy with a side of salad, crusty bread, or rice.

Notes

Add cooked pasta to stretch this into a more filling meal.

Sliced mushrooms or artichokes add extra texture and flavor.

Fresh baby spinach works best for color and texture but frozen works in a pinch.

This dish reheats beautifully and is great for meal prep.

For a low-carb version, skip the pasta and serve with roasted vegetables.
