Ingredients
Scale
- 1 lb Italian sausage
- 1 onion, chopped
- 3 cloves garlic, minced
- 6 cups chicken broth
- 1 can diced tomatoes (14.5 oz)
- 1 cup ditalini pasta
- 2 cups fresh spinach
- 1/2 cup grated Parmesan cheese
- 1/2 cup heavy cream
- Salt and pepper to taste
Instructions
- In a large pot, cook the Italian sausage over medium heat until browned.
- Add the chopped onion and minced garlic to the pot, cooking until the onion is translucent and softened.
- Stir in the chicken broth and diced tomatoes, bringing the mixture to a boil.
- Add the ditalini pasta and let the soup simmer until the pasta is cooked through, about 8-10 minutes.
- Stir in the fresh spinach and let it wilt into the soup.
- Lower the heat and stir in the grated Parmesan cheese and heavy cream, mixing until the cheese is melted and the soup becomes creamy.
- Season with salt and pepper to taste.
- Serve hot and enjoy!
Notes
- For added richness, you can use a bit more Parmesan cheese or a splash of half-and-half instead of the heavy cream.
- If you prefer a spicier soup, you can use hot Italian sausage or add red pepper flakes.
- This soup pairs wonderfully with crusty bread for dipping.
