Ingredients

  • 1 lb smoked sausage, sliced
  • 12 oz penne pasta
  • 2 tablespoons olive oil
  • 1 small onion, diced
  • 2 cloves garlic, minced
  • 1 cup heavy cream
  • 1 cup chicken broth
  • 1 cup shredded mozzarella cheese
  • 1 teaspoon Italian seasoning
  • ½ teaspoon paprika
  • Salt and pepper, to taste

 

  • Fresh parsley, chopped (for garnish)

Instructions

  • Cook the penne pasta according to the package instructions. Drain and set aside.
  • In a large skillet, heat the olive oil over medium heat. Add the sliced smoked sausage and cook until browned, about 5-7 minutes. Remove the sausage from the skillet and set aside.
  • In the same skillet, add the diced onion and minced garlic. Sauté for 2-3 minutes until softened and fragrant.
  • Pour in the heavy cream and chicken broth, stirring to combine. Bring to a simmer and cook for 3-5 minutes until the sauce begins to thicken.
  • Add the mozzarella cheese, Italian seasoning, paprika, salt, and pepper. Stir until the cheese melts and the sauce becomes creamy.
  • Return the smoked sausage to the skillet and add the cooked pasta. Toss everything together until the pasta is coated in the creamy sauce.

 

  • Garnish with freshly chopped parsley before serving.

Notes

  • If you want a lighter version, you can use half-and-half instead of heavy cream.
  • You can substitute the mozzarella cheese with another cheese like cheddar or Parmesan if you prefer.

 

  • This recipe can be made ahead and stored in the fridge for up to 3 days. Just reheat with a little extra chicken broth or cream.
