Description

  • 1/2 yellow onion, diced

  • 3 cloves garlic, minced

  • 1 jalapeño, diced (optional)

  • 1/2 teaspoon garlic powder

  • 1/2 teaspoon onion powder

  • 1/2 teaspoon smoked paprika

  • 1/2 teaspoon black pepper

  • 1/2 teaspoon salt

  • 8 ounces vegan breakfast sausage (cut into bite-sized pieces, such as Beyond Meat)

  • 16 ounces Just Egg (or other plant-based egg alternative)

  • 1 cup non-dairy milk (such as oat milk)

  • 8 ounces vegan cream cheese (separated, such as Kite Hill)

  • 2 cans crescent dough (such as Trader Joe’s)

  • Chives (optional, for serving)


Instructions

  • Preheat the Oven:
    Preheat the oven to 375°F (190°C). Grease a 9×13-inch baking dish or line it with parchment paper.

  • Cook the Vegetables and Sausage:
    Heat the avocado oil in a large skillet over medium heat. Add the diced onion, minced garlic, and jalapeño (if using). Sauté for 3-4 minutes until softened.
    Add the vegan breakfast sausage to the skillet and cook until browned and crispy, about 5-7 minutes.
    Sprinkle in the garlic powder, onion powder, smoked paprika, salt, and pepper, and stir to combine. Set aside.

  • Prepare the Egg Mixture:
    In a mixing bowl, whisk together the Just Egg, non-dairy milk, and vegan cream cheese. Stir until smooth and creamy.

  • Assemble the Casserole:
    Unroll the crescent dough and layer it in the bottom of the prepared baking dish, pressing it down to cover the bottom evenly.
    Evenly distribute the cooked sausage and vegetable mixture over the crescent dough.
    Pour the egg mixture over the top, making sure to spread it evenly.

 

  • Bake:
    Bake the casserole in the preheated oven for 25-30 minutes, or until the crescent dough is golden brown and the egg mixture is set.

Notes

  • Feel free to add more veggies, like spinach, mushrooms, or bell peppers, for extra flavor.

  • For a spicier kick, increase the amount of jalapeño or add a dash of hot sauce to the egg mixture.
