Description

Discover the secret to perfectly crispy roasted potatoes with this easy Crispy Potato Roast recipe. Featuring golden, crunchy exteriors and fluffy interiors, this dish uses simple pantry staples and a high-heat roasting method to deliver unbeatable flavor and texture. Ideal as a comforting side or a quick meal, it’s kid-friendly, versatile, and sure to become a family favorite.

Ingredients

Scale

Potatoes

  • 2 pounds Russet or Yukon Gold potatoes, peeled if desired and cut into 1 to 1.5 inch chunks

Seasonings & Oil

  • 3 tablespoons olive oil (or avocado oil for vegan variation)
  • 1 teaspoon salt
  • ½ teaspoon freshly ground black pepper
  • 1 teaspoon garlic powder or 2 cloves fresh garlic, minced
  • 1 teaspoon dried herbs (rosemary, thyme, or oregano)
  • ½ teaspoon paprika (optional)

Instructions

  1. Choose and Prepare Your Potatoes: Select firm, medium-sized russet or Yukon Gold potatoes. Wash and peel them if desired, then cut into evenly sized chunks about 1 to 1.5 inches to ensure uniform cooking.
  2. Parboil the Potatoes: Place the potato chunks into boiling salted water. Cook for 7 to 10 minutes until they are partially tender but still firm. This step helps create a fluffy interior and roughens the surface for better crisping.
  3. Drain and Roughen Up: Drain the potatoes thoroughly and return them to the hot pot or a bowl. Gently shake or toss to roughen the surfaces, which enhances crispiness during roasting.
  4. Season and Oil: Drizzle olive oil generously over the potatoes. Sprinkle with salt, pepper, garlic powder (or fresh garlic), dried herbs, and paprika if using. Toss everything thoroughly to coat each piece evenly with seasoning and oil.
  5. Roast at High Heat: Arrange the potatoes in a single layer on a baking sheet lined with parchment paper or foil for easy cleanup. Roast in a preheated oven at 425°F (220°C) for 30 to 40 minutes, flipping the potatoes halfway through to ensure even browning and crispiness.
  6. Serve Hot and Crispy: Once golden and crispy, remove the potatoes from the oven. Let them cool slightly to lock in the crunch and enjoy immediately with your favorite dips or as a side to your main dishes.

Notes

  • Don’t skip parboiling to ensure a fluffy interior and crispy crust.
  • Use enough oil to coat the potatoes well but avoid excess for balanced crispiness.
  • Space potatoes evenly on the baking sheet to prevent steaming and promote roasting.
  • Flip halfway through roasting for uniform golden color and crunch.
  • Roast at high heat (425°F) to maximize crispness without drying out.
