- 1 lb ground beef
- 1 onion, diced
- 3 cloves garlic, minced
- 6 cups potatoes, peeled and diced
- 4 cups chicken broth
- 1 cup water
- 1 tsp salt
- 1/2 tsp pepper
- 1 cup heavy cream
- 1 cup shredded cheddar cheese
- Green onions, for garnish
Instructions
- Brown the Beef: In a skillet, cook the ground beef with the diced onion and minced garlic over medium heat until the beef is browned. Drain any excess fat.
- Transfer to Crockpot: Transfer the cooked beef mixture to the crockpot. Add diced potatoes, chicken broth, water, salt, and pepper. Stir to combine.
- Cook: Cover and cook on low for 7-8 hours or on high for 4-5 hours, until the potatoes are tender.
- Add Cream and Cheese: Stir in the heavy cream and shredded cheddar cheese. Let cook for an additional 30 minutes, until heated through and the cheese is melted.
- Serve: Serve hot, garnished with chopped green onions.
Notes
- For a thicker soup, you can mash a portion of the potatoes after cooking.
- You can substitute the heavy cream with half-and-half or milk for a lighter version.
- This soup can be made ahead of time and reheated.
