Description

This hearty and creamy potato soup, made with savory ground beef, tender potatoes, and cheddar cheese, is the perfect comfort food. Easily made in the crockpot, it’s a filling meal for busy days. Garnish with green onions for an added touch!


Ingredients

  • 1 lb ground beef
  • 1 onion, diced
  • 3 cloves garlic, minced
  • 6 cups potatoes, peeled and diced
  • 4 cups chicken broth
  • 1 cup water
  • 1 tsp salt
  • 1/2 tsp pepper
  • 1 cup heavy cream
  • 1 cup shredded cheddar cheese
  • Green onions, for garnish

Instructions

  • Brown the Beef: In a skillet, cook the ground beef with the diced onion and minced garlic over medium heat until the beef is browned. Drain any excess fat.
  • Transfer to Crockpot: Transfer the cooked beef mixture to the crockpot. Add diced potatoes, chicken broth, water, salt, and pepper. Stir to combine.
  • Cook: Cover and cook on low for 7-8 hours or on high for 4-5 hours, until the potatoes are tender.
  • Add Cream and Cheese: Stir in the heavy cream and shredded cheddar cheese. Let cook for an additional 30 minutes, until heated through and the cheese is melted.
  • Serve: Serve hot, garnished with chopped green onions.

Notes

  • For a thicker soup, you can mash a portion of the potatoes after cooking.
  • You can substitute the heavy cream with half-and-half or milk for a lighter version.
  • This soup can be made ahead of time and reheated.
