  • Author: Sarah
  • Total Time: 2-3 hours (including chilling)
  • Yield: 12-16 truffles (depending on size) 1x
  • Diet: Vegetarian

Description

These Crunchy Chocolate Hazelnut Truffles are the ultimate indulgence for chocolate lovers! A rich, creamy chocolate ganache center, combined with the satisfying crunch of hazelnuts, creates a deliciously irresistible treat. Perfect for gifting, special occasions, or simply treating yourself to a luxurious dessert.

Ingredients

Scale

For the ganache:

  • 8 oz semi-sweet chocolate (chopped or chips)
  • 1/2 cup heavy cream
  • 1 tbsp unsalted butter
  • 1 tsp vanilla extract

For the coating:

  • 1 cup hazelnuts (toasted and chopped)
  • 1/2 cup cocoa powder (or powdered sugar for a sweeter option)
  • 1/2 cup crushed graham crackers or crushed wafers (optional, for extra crunch)

Instructions

  • Make the ganache:
    • In a heatproof bowl, place the chopped semi-sweet chocolate. In a small saucepan, heat the heavy cream over medium heat until it begins to simmer (do not boil).
    • Pour the hot cream over the chocolate, add the butter, and let it sit for 1-2 minutes to melt the chocolate. Stir until smooth and fully combined.
    • Stir in the vanilla extract and let the ganache cool to room temperature, then place in the refrigerator for 1-2 hours, or until it firms up enough to scoop.
  • Prepare the coating:
    • While the ganache chills, toast the hazelnuts. Place them in a dry skillet over medium heat for 5-7 minutes, or until fragrant. Allow them to cool, then chop them finely.
    • In a separate bowl, sift together the cocoa powder (or powdered sugar) and crushed graham crackers or wafers if using.
  • Form the truffles:
    • Once the ganache has firmed up, use a spoon or melon baller to scoop out small portions of the ganache. Roll each portion into a ball using your hands (you can wear gloves to keep your hands clean if you prefer).
    • Roll the ganache balls in the chopped hazelnuts to coat them evenly, ensuring each truffle is fully covered.
  • Chill and serve:
    • Place the finished truffles on a baking sheet lined with parchment paper. Refrigerate for at least 30 minutes to firm them up.
    • Once chilled, the truffles are ready to be enjoyed! You can store them in an airtight container in the refrigerator for up to a week.

Notes

  • For a twist, try adding a pinch of sea salt on top of each truffle for a salty-sweet combination.
  • These truffles can also be rolled in melted chocolate instead of hazelnuts for a smoother finish.
  • If you want extra crunch, add a tablespoon of crushed hazelnuts into the ganache before chilling.
