Instructions
- Make the ganache:
- In a heatproof bowl, place the chopped semi-sweet chocolate. In a small saucepan, heat the heavy cream over medium heat until it begins to simmer (do not boil).
- Pour the hot cream over the chocolate, add the butter, and let it sit for 1-2 minutes to melt the chocolate. Stir until smooth and fully combined.
- Stir in the vanilla extract and let the ganache cool to room temperature, then place in the refrigerator for 1-2 hours, or until it firms up enough to scoop.
- Prepare the coating:
- While the ganache chills, toast the hazelnuts. Place them in a dry skillet over medium heat for 5-7 minutes, or until fragrant. Allow them to cool, then chop them finely.
- In a separate bowl, sift together the cocoa powder (or powdered sugar) and crushed graham crackers or wafers if using.
- Form the truffles:
- Once the ganache has firmed up, use a spoon or melon baller to scoop out small portions of the ganache. Roll each portion into a ball using your hands (you can wear gloves to keep your hands clean if you prefer).
- Roll the ganache balls in the chopped hazelnuts to coat them evenly, ensuring each truffle is fully covered.
- Chill and serve:
